Happy Sunday and Happy Father’s Day! I’m a little late on this post, but my week and weekend has been a little unpredictable. Our house got hit by the stomach bug this week and I have more left over from last week’s meal plan than usual. We’re also heading out on vacation this Friday, so I am going to be very careful not to overbuy. This weeks meals are going to be focused on using up anything I have that will spoil while we are away.
Panang Curry – $0
I’m making this one today and plan on posting this recipe later this week. This is my favorite curry dish now, and I’m really exciting about sharing this one with you.
Since we have so many veggies from the farm and last week’s grocery run, I only need to buy the chicken. This will be an easy one-pot meal. I also looked for the largest bird, because I have plans with some left over chicken meat.
Chicken Salad – $3.68
I’m making chicken salad with the left over meat, which will be great for lunches! I just needed some celery and red grapes to complete my ingredient list for this recipe. It looks like my recipe is broken, so I will have to go back and update it this week as well.
Eggs & Potatoes – $0
I’m overloaded with eggs right now and I’m looking for ways to incorporate eggs in our dinners right now. Eggs are great for using left over veggies, so I’m sure we can get creative here. I will also hard boil some as snacks, especially as pre or post work-out food!
Total Grocery Cost
I’ve visited three grocery stores this week, and my total comes to $45.74. Since Sprout baby food pouches haven’t hit Publix’s weekly ad recently, I’m buying a few at a time for a whopping $1.69/each. Just six pouches cost me $10.14 this week. I also bought four boxes of baby oatmeal, ginger ale for our sick tummies, a couple other food pouches, bread, and a box of corn dogs for the picky toddler.
We’ll be at the beach next week, so I’ll be taking a break from the meal plan. I’m going with my husband’s family and each family unit (e.g. my husband, myself, and kids) is responsible for dinner one night of the whole week. His family really likes good healthy food, so it’s fun trying new things.
