There’s a good bit going on this week, with July 4th and my son’s birthday. Coming back from vacation, I’ve had to re-stock a good bit of food and have been scrambling to figure out what meals to make this week. Since I have to re-stock, my meals are all Aldi ingredients to keep the cost down.
Oat Flour Waffles – $0
I’m really making these this week. In fact, I’m making them tomorrow and tripling the recipe and freezing the left overs. These left-overs make a great quick breakfast or snack! Just pop them into the toaster. I have all the ingredients to make this recipe.
Chicken Salad – $14.92 | Roasted Veggies – $4.68 | Bread, Spinach, and Chips – $5.79
This meal is more for lunches this week. Since my husband works long hours in the sun, it’s nice for him to come in to a cold chicken salad sandwich. I’ll roast some potatoes and carrots to serve as a side. I bought the biggest organic chicken they had, and this should feed us for both for 4 meals (8 servings). Cost per serving is $3.17.
Chicken Tacos – $13.69
My husband LOVES tacos, so you’ll see us doing this a lot. This week we’ll be using chicken. I bought some avocados, cilantro, fresh corn, salsa, and organic blue corn chips to go with this meal. I can whip up some black beans and Mexican rice, and it can be a filling meal. I’m planning on doing this two nights this week (4 servings) plus a couple toddler portions. Cost per serving is $3.42.
Burgers & Veggies – $11.66
With July 4th coming up, I’m doing one of my favorites right now. Just good ole burgers, some fresh okra and roasted potatoes. I buy enough meat to make 8 burgers, so this is really 8 servings. I have plenty of sweet and golden potatoes to make this a complete meal which breaks down the cost per serving to $1.46!
Breakfast cereals, milk, half & half, strawberries, blueberries, a pomegranate, powdered sugar (Birthday French Toast), Worcestershire sauce, honey crisp apple, and sprout baby food pouches. My total receipts come to $100.80 which isn’t too bad. I plan on experimenting with a couple recipes with some of the ingredients above. In addition, my toddler had french toast for the first time over vacation, and of course he loved it! So, I’m making it for him to celebrate. We’re a little gluten and dairy heavy this week, but coming back from vacation, we’re still getting our bearings.
