The last two times I’ve written meal plans, I’ve assigned meals to certain nights. In my life, it doesn’t usually work out that way. It’s best if I just plan on 3-4 meals, figure out when I can cook them, and then serve based on schedule and needs. For example, I knew if I didn’t cook last Tuesday night, neither of us would have enough left overs to take to work. So I pulled my Wednesday meal to Tuesday.
With that said, I’m going to start listing my meals and cost. Once I have all my recipes together, I’ll be able to start getting more specific on cost per serving and calories.
Baked Sweet Potatoes, Quinoa, and Veggies – $1.69
We have quinoa, kale, and broccoli left over from last week. In addition, we have zucchini and squash from the farm that can be sautéed. I’ll bake some sweet potatoes and it’s a meal!
This was from last week. It’s a 4 step process, so I never got around making it. I usually avoid recipes like this, but it’s one of my favorite meals!
Gyro Tacos – $16.04
This is essentially a gyro on corn tortillas. It’s a more expensive meal because gyro meat is $3.99 per package which feeds 2 adults and 1 toddler a meal. Then I spring for all the necessary toppings, including tzatziki sauce. I can find these two specialty items (gyro meat and tzatziki sauce) at Trader Joe’s.
This one is from last week as well, except I’m re-making it. I work long hours and got the extra crispy version of this crock pot meal. I’m re-making it this weekend while I can keep an eye on it. Since my husband brought home broccoli and green onions from the farm, I just have to buy the stew meat.
Panang Curry – $12.05
I’ll work on getting this recipe up this week. This is a recipe many people ask for, so it’ll be next on my list of recipes.
Cost of All Groceries and Other Items Bought
Aldi – $37.49
Lots of lunch stuff (bread, crackers, puffs, goldfish), half & half for breve lattes, and corn on the cob for a cook-out Saturday night (tonight).
Trader Joe’s – $29.56
Bag of Organic Apples, apple sauce crushers, and corn on the cob for a cook-out again.
Publix – $6.38
Crazy expensive Sprout Baby Food Pouches that both my kids LOVE.
Asian Market – $12.65
Things for my pantry. 3 packages of rice noodles, 3 cans of panang curry paste, ginger, and hoisin sauce.
My Total – $86.08
