I came across this noodle cuisine when I least expected it. Some friends brought us over this Asian inspired dish while I was on maternity leave with Eoin and LOVED it. This savory dish is so easy, just remove from the refrigerator and enjoy!
We have tried doing this recipe a number of different ways; from noodles, type of chicken, peanut butter, peanut butter ratio, fresh ginger vs ground ginger, and even forgot an ingredient here and there. I will admit, the list of ingredients is a little long, but it is SO worth it and has become one of my favorite meals! My picky toddler even approves!
This recipe calls for rice noodles and I’ve tied multiple brands. In my opinion, the best is Annie Chun’s Rice Noodles but they’re a little expensive. They can be found at Publix and even cheaper at Thrive Market. Searching for a cost effective alternative, I have also found that the Green Elephant Rice Noodles from the asian market is pretty tasty as well. If you aren’t sure, just ask. If they don’t carry the brand, ask an associate what brand all the asian restaurants like or use.
